A legitimate concern, and one I've noted while making this stuff. I've ordered a beaker with a better bottom than my measuring cup for more stability due to this. But I've operated it uncaffinated for a week without incident. I even did it underway once. So I think it is relatively safe.

Yes, flesh scalding. I think for milk, we never wanted to go above 180° or so, but there were always customers who wanted it "super hot", despite my explanations about scalded milk tasting unpleasant.

Boiling point is a function of atmospheric pressure which is a function of altitude.  If you run off to the park and get up to 9,000 feet or so water boils right at your sweet spot.
